HPP Raw Lobster
High-Pressure Processing (HPP)
Lobsters are placed in a cold high-pressure chamber. This process causes the lobster to contract and so detaches the raw meat from the shell. HPP produces a quick, clean, and complete release of lobster meat from the shell.
The process uses no heat. The lobster remains completely raw, ensuring peak freshness for future flavour infusions.
High-Pressure Processing (HPP) offers:
A quick, clean, & complete release of lobster meat from the shell
Superior moisture retention
Premium texture
Unparalleled presentation
HPP products can be further processed based on customer needs, such as blanched or cooked.
